For the Casserole
- 1 lb ground beef
- 1 small onion, diced
- 1 packet taco seasoning
- ¾ cup water
- 1 can (15 oz) corn, drained
- 1 can (15 oz) black beans, rinsed and drained
- 1½ cups shredded cheddar or Mexican blend cheese
- 2–3 cups corn chips (Fritos or Doritos), slightly crushed

- Shredded lettuce
- Diced tomatoes
- Sour cream
- Sliced olives
- Jalapeños
- Salsa or avocado
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish to prevent sticking.
- Cook the Beef: In a skillet over medium heat, cook the ground beef together with the diced onion until the meat is thoroughly browned and the onions are soft. Drain any excess grease from the pan to keep the dish from being oily.
- Add Seasoning & Veggies: Stir in the taco seasoning packet and water, then let the mixture simmer for 2–3 minutes until it thickens slightly. Next, add the drained corn and black beans to the skillet and stir everything together until well combined.
- Assemble the Casserole: Spread the slightly crushed corn chips evenly on the bottom of your prepared baking dish. Pour the beef, bean, and corn mixture over the chips and spread it out evenly. Sprinkle the shredded cheese over the top to cover the casserole.
- Bake: Place the casserole in the oven and bake uncovered for 10–15 minutes, or until the cheese is melted, bubbly, and lightly golden on top.
- Top and Serve: Remove the casserole from the oven and top with your preferred taco toppings such as shredded lettuce, diced tomatoes, sour cream, sliced olives, jalapeños, and salsa or avocado. Serve hot for a delicious, comforting meal.
Notes
- You can substitute ground turkey or chicken for ground beef to reduce fat content.
