Instructions

  1. Prepare the Marinade: In a mixing bowl, whisk together fish sauce, soy sauce, brown sugar, minced garlic, grated ginger, vegetable oil, honey, black pepper, and chili powder until all ingredients are well combined into a smooth marinade.
  2. Marinate the Chicken: Add the boneless, skinless chicken thighs to the marinade and toss to ensure each piece is fully coated. Cover the bowl and refrigerate for at least one hour, though marinating overnight will yield more intense flavors.
  3. Preheat the Grill: Set your grill to medium-high heat, approximately 400°F (204°C), allowing it to get hot and ready for cooking the chicken.
  4. Grill the Chicken: Remove the chicken from the marinade and place it on the grill. Cook for about 5 to 7 minutes on each side, turning once, until the internal temperature reaches 165°F (74°C) and the chicken is cooked through with a nice charred exterior.
