- 1/4 cup heavy cream
Instructions
- Make the Lava Center: In a small saucepan, combine the chopped semi-sweet chocolate and heavy cream. Heat over low heat, stirring constantly, until the chocolate is fully melted and the mixture is smooth.
- Chill the Lava Center: Remove from heat and set aside to cool slightly. Once slightly cooled, chill the mixture in the fridge for about 30 minutes or until firm enough to scoop.
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin or line with paper muffin liners.
- Mix Dry Ingredients: In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, salt, granulated sugar, and brown sugar.
- Mix Wet Ingredients: In a separate bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract.
- Combine Batter: Add the wet ingredients to the dry ingredients and mix until just combined. Avoid overmixing to keep muffins tender.
- Add Chocolate Chips: Stir in the semi-sweet, white, and milk chocolate chips gently to distribute evenly in the batter.
