Description

These Triple Chocolate Lava Muffins are a decadent treat featuring a moist chocolate muffin with a gooey, molten chocolate center. Combining semi-sweet, white, and milk chocolate chips, plus a rich lava core made from melted semi-sweet chocolate and cream, these muffins offer a triple chocolate experience perfect for dessert or a special snack.

Ingredients

Scale

For the Muffins:

  • 1 3/4 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1/2 cup whole milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup boiling water
  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup white chocolate chips
  • 1/4 cup milk chocolate chips

For the Chocolate Lava Center:

  • 4 oz semi-sweet chocolate, chopped
  • 1/4 cup heavy cream

Instructions

  1. Make the Lava Center: In a small saucepan, combine the chopped semi-sweet chocolate and heavy cream. Heat over low heat, stirring constantly, until the chocolate is fully melted and the mixture is smooth.
  2. Chill the Lava Center: Remove from heat and set aside to cool slightly. Once slightly cooled, chill the mixture in the fridge for about 30 minutes or until firm enough to scoop.
  3. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin or line with paper muffin liners.
  4. Mix Dry Ingredients: In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, salt, granulated sugar, and brown sugar.
  5. Mix Wet Ingredients: In a separate bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract.
  6. Combine Batter: Add the wet ingredients to the dry ingredients and mix until just combined. Avoid overmixing to keep muffins tender.
  7. Add Chocolate Chips: Stir in the semi-sweet, white, and milk chocolate chips gently to distribute evenly in the batter.
  8. Fill Muffin Cups Partially: Spoon about a tablespoon of muffin batter into each muffin cup to create a base layer.
  9. Add Lava Center: Place a small spoonful of the chilled chocolate lava center in the middle of each muffin cup on top of the batter base.
  10. Fill Muffin Cups: Cover the lava center with more batter until each cup is about 3/4 full to allow room for rising.
  11. Bake Muffins: Bake for 18-22 minutes, or until a toothpick inserted into the edge of the muffin comes out clean, but avoid touching the lava center to keep it molten.
  12. Cool Muffins: Let the muffins cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
  13. Serve: Serve the muffins warm to enjoy the best molten lava effect. Optionally, pair with a scoop of vanilla ice cream for an indulgent dessert.

Notes

  • Do not overmix the batter as this can make the muffins tough.
  • Ensure the lava center is chilled enough to hold its shape during assembly.
  • Baking time may vary slightly depending on your oven; monitor closely to maintain a gooey center.
  • These muffins are best served warm to appreciate the molten chocolate center.
  • Use paper muffin liners for easy removal or grease the muffin tin well to prevent sticking.
