Ingredients
Scale
Fruit
- 6 ripe peaches, pitted and sliced
- 1 pint fresh blueberries
- 1 pint fresh raspberries
Herbs & Dressing
- 1/2 cup fresh mint leaves, chopped
- 1/4 cup honey
- 2 tablespoons lime juice, freshly squeezed
- 1/4 cup orange juice, freshly squeezed
- 1 teaspoon lime zest
Optional Toppings
- 1/4 cup slivered almonds, toasted
- 1/4 cup crumbled feta cheese
Instructions
- Prepare the Peaches: Wash the peaches, cut around the seam, twist to separate the halves, remove pits, and slice into 1/2 inch thick wedges. Place the sliced peaches in a large mixing bowl.
- Add the Berries: Gently rinse the blueberries and raspberries, then add them to the bowl with the peaches.
- Chop the Mint: Rinse and dry the fresh mint leaves. Stack, roll tightly, and slice thinly (chiffonade). Add the chopped mint to the bowl with the fruit.
- Combine the Liquids: In a small bowl, whisk together the honey, freshly squeezed lime juice, and orange juice until well combined.
- Add the Lime Zest: Grate the lime zest into the dressing, taking care to avoid the white pith, then whisk again until smooth.
- Pour the Dressing: Pour the honey-lime dressing over the fruit mixture in the large bowl.
- Gently Toss: Toss the fruit gently to coat evenly with the dressing without breaking the berries.
- Chill (Optional): Cover and refrigerate the salad for at least 30 minutes to allow flavors to meld and serve chilled for best taste.
- Add Toppings (Optional): Just before serving, sprinkle the toasted slivered almonds and crumbled feta cheese on top for added crunch and flavor contrast.
Notes
- Use ripe, firm peaches for best texture and sweetness.
- Feel free to substitute or add other summer fruits like strawberries or blackberries.
- To toast almonds, heat them in a dry skillet over medium heat for 3-5 minutes until fragrant and lightly browned.
- The salad can be prepared a few hours ahead but add the almonds and feta just before serving to keep them fresh and crunchy.
- This salad can be served as a light dessert or a side dish with grilled meats or salads.
