  • 3 large eggs
  • ½ cup sour cream
  • 1 tablespoon lemon juice

For the topping:

  • 1½ cups fresh sliced peaches
  • 1 cup fresh mixed berries (such as strawberries, blueberries, and raspberries)
  • 2 tablespoons peach or apricot jam (warmed)
  • mint leaves for garnish (optional)


Instructions

  1. Preheat oven and prepare crust: Preheat oven to 325°F. Combine graham cracker crumbs, sugar, and melted butter. Press into a 9-inch springform pan. Bake for 10 minutes.
  2. Prepare filling: Beat cream cheese until smooth. Add sugar, vanilla, eggs, sour cream, and lemon juice. Pour over crust.
  3. Bake: Bake for 55-65 minutes until set. Cool in oven, then refrigerate for 4 hours.
