- 1½ cups graham cracker crumbs

- 6 tablespoons unsalted butter (melted)
For the filling:
- 24 oz cream cheese (softened)
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- ½ cup sour cream
- 1 tablespoon lemon juice
For the topping:
- 1½ cups fresh sliced peaches
- 1 cup fresh mixed berries (such as strawberries, blueberries, and raspberries)
- 2 tablespoons peach or apricot jam (warmed)
- mint leaves for garnish (optional)
Instructions
- Preheat oven and prepare crust: Preheat oven to 325°F. Combine graham cracker crumbs, sugar, and melted butter. Press into a 9-inch springform pan. Bake for 10 minutes.
- Prepare filling: Beat cream cheese until smooth. Add sugar, vanilla, eggs, sour cream, and lemon juice. Pour over crust.
- Bake: Bake for 55-65 minutes until set. Cool in oven, then refrigerate for 4 hours.
- Top and serve: Top with peaches and berries. Brush with warmed jam. Garnish with mint.
