Description

This Spinach Casserole is a creamy and comforting baked dish featuring a blend of eggs, cottage cheese, spinach, and flavorful cheeses. Perfect as a nutritious side or a light main course, it offers a delicious way to enjoy spinach with a rich, cheesy texture and hints of nutmeg and garlic.

Ingredients

Scale

Main Ingredients

  • 3 large eggs
  • 2 cups cottage cheese
  • 10-ounce package frozen chopped spinach, thawed and well drained
  • 1/3 cup crumbled feta cheese
  • 1/3 cup diced sweet onion
  • 1/4 cup melted butter
  • 2 tablespoons freshly grated Parmesan cheese
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon garlic powder
  • dash of nutmeg

Instructions

  1. Preheat and Prepare Dish: Preheat your oven to 350°F (175°C) and grease a 9-inch square casserole dish to prevent sticking and ensure easy serving.
  2. Combine Ingredients: In a large mixing bowl, beat the eggs and mix with cottage cheese, thawed and drained spinach, crumbled feta, diced sweet onion, melted butter, grated Parmesan, black pepper, garlic powder, and a dash of nutmeg. Stir thoroughly until everything is well incorporated.
  3. Pour and Bake: Pour the mixture evenly into the prepared casserole dish. Bake uncovered for 40 to 45 minutes, or until the center is nearly set and the top is lightly golden.
  4. Cool and Serve: Remove the casserole from the oven and let it cool for 5 to 10 minutes. This resting time helps the casserole firm up, making it easier to cut into neat squares. Serve warm.

Notes

  • Make sure to thoroughly drain the spinach to prevent excess moisture in the casserole.
  • Feel free to substitute sweet onion with yellow or white onion if preferred.
  • This casserole can be prepared a day ahead and reheated gently in the oven.
  • For a lower fat option, use low-fat cottage cheese and reduce the butter amount.
  • Adding a pinch of crushed red pepper flakes can give a nice mild heat.
