Main Ingredients
- 3 large eggs
- 2 cups cottage cheese
- 10-ounce package frozen chopped spinach, thawed and well drained
- 1/3 cup crumbled feta cheese
- 1/3 cup diced sweet onion
- 1/4 cup melted butter
- 2 tablespoons freshly grated Parmesan cheese
- 1/8 teaspoon black pepper
- 1/8 teaspoon garlic powder
- dash of nutmeg
Instructions
- Preheat and Prepare Dish: Preheat your oven to 350°F (175°C) and grease a 9-inch square casserole dish to prevent sticking and ensure easy serving.
- Combine Ingredients: In a large mixing bowl, beat the eggs and mix with cottage cheese, thawed and drained spinach, crumbled feta, diced sweet onion, melted butter, grated Parmesan, black pepper, garlic powder, and a dash of nutmeg. Stir thoroughly until everything is well incorporated.
- Pour and Bake: Pour the mixture evenly into the prepared casserole dish. Bake uncovered for 40 to 45 minutes, or until the center is nearly set and the top is lightly golden.
- Cool and Serve: Remove the casserole from the oven and let it cool for 5 to 10 minutes. This resting time helps the casserole firm up, making it easier to cut into neat squares. Serve warm.
Notes
- Make sure to thoroughly drain the spinach to prevent excess moisture in the casserole.
- Feel free to substitute sweet onion with yellow or white onion if preferred.
- This casserole can be prepared a day ahead and reheated gently in the oven.
- For a lower fat option, use low-fat cottage cheese and reduce the butter amount.
- Adding a pinch of crushed red pepper flakes can give a nice mild heat.
