Instructions

  1. Prepare the chicken: Pat the chicken breasts dry with paper towels, then season both sides generously with salt and pepper to enhance the flavors.
  2. Heat the olive oil: In a large skillet over medium-high heat, add the olive oil and allow it to warm up until shimmering but not smoking, to ensure a good sear on the chicken.
  3. Sear the chicken breasts: Place the chicken breasts in the skillet carefully and cook for about 6–7 minutes on each side, or until the chicken is golden brown and cooked through with an internal temperature of 165°F (74°C).
  4. Prepare the hot honey sauce: While the chicken cooks, in a small bowl, combine the hot honey, minced garlic, and red pepper flakes. Mix well to infuse the honey with spicy and garlicky notes.
  5. Add the cherry tomatoes (optional): If using cherry tomatoes, add them to the skillet during the last 3–4 minutes of cooking the chicken, allowing them to soften slightly without losing shape.
  6. Glaze the chicken: Once the chicken is nearly cooked through, pour the hot honey sauce over the chicken breasts in the skillet, turning them gently to coat them evenly. Let it cook for an additional 2–3 minutes so the sauce thickens slightly and caramelizes on the chicken.
