Ingredients
Scale
Main Ingredients
- 1.5 lbs pork loin
- 2 small yellow onions
Sauce Ingredients
- 1/2 cup chicken broth
- 1/2 cup balsamic vinegar
- 1 tablespoon soy sauce
- 1/2 teaspoon garlic powder
- 1 tablespoon brown sugar
- 2 teaspoons crushed red pepper flakes
Instructions
- Prepare the sauce: In a small bowl, combine chicken broth, balsamic vinegar, soy sauce, garlic powder, brown sugar, and 1 teaspoon of crushed red pepper flakes. Stir well until all ingredients are fully mixed.
- Slice the onions: Peel and slice the two small yellow onions into large slices to add texture and flavor during cooking.
- Assemble in the crockpot: Place the pork loin in the crockpot, arrange the sliced onions around and on top of the pork. Pour the prepared sauce evenly over the pork and onions, then sprinkle the remaining teaspoon of crushed red pepper flakes over the onions for added spice.
- Slow cook the pork: Cover and cook on high heat for 4 hours, or alternatively on low heat for 7-8 hours until the pork is tender and cooked through.
- Shred and finish cooking: In the last 30 minutes of cooking, carefully remove the pork from the crockpot and place it onto a plate. Using two forks, gently shred the pork into bite-sized chunks. Return the shredded pork to the crockpot, stir to mix with the sauce, and cook for the remaining 30 minutes to absorb flavors.
- Serve and enjoy: Once cooked, serve the spicy balsamic pork loin immediately while warm for the best flavor and texture experience.
Notes
- You can adjust the amount of crushed red pepper flakes according to your preferred spice level.
- For a thicker sauce, remove the pork after shredding and reduce the liquid on the stovetop before adding back the meat.
- This recipe can be prepared in advance; leftovers taste great when reheated.
- Serve with rice, mashed potatoes, or steamed vegetables for a complete meal.
