- 1/2 cup crumbled feta cheese
- 1/4 cup ricotta or cream cheese
- 1 tablespoon chopped fresh dill (or 1 teaspoon dried)
- 1 egg
- Salt and black pepper to taste

- Sesame seeds (optional, for topping)
Instructions
- Preheat oven: Preheat oven to 400°F and line a baking sheet with parchment paper.
- Sauté onion and garlic: In a skillet, heat olive oil over medium heat. Sauté onion until soft, about 3 minutes. Add garlic and cook for another 30 seconds.
- Prepare spinach mixture: Stir in spinach and cook for 1 minute to remove any remaining moisture. Remove from heat and let cool slightly. In a bowl, mix spinach mixture with feta, ricotta, dill, egg, salt, and pepper.
- Assemble the pastries: Unroll puff pastry on a lightly floured surface. Spread the spinach filling evenly over the entire sheet. Roll up the pastry tightly from one edge to the other, like a jelly roll. Slice into 1-inch swirls and place flat on the prepared baking sheet.
- Bake: Brush with beaten egg and sprinkle with sesame seeds if desired. Bake for 18 to 22 minutes, or until golden brown and puffed.
- Serve: Serve warm or at room temperature.
