Instructions
- Crush Cookies: Place the gingersnap or gingerbread cookies into a food processor and crush them into fine crumbs.
- Combine Ingredients: In a large mixing bowl, add the cookie crumbs and softened cream cheese.
- Mix: Use an electric mixer to thoroughly combine the cookie crumbs and cream cheese until evenly blended.
- Shape Truffles: Using a 1 ½ tablespoon cookie scoop, form rounded scoops of the mixture, roll each into balls, and place them on a tray lined with parchment paper.
- Chill Truffles: Refrigerate or freeze the truffle balls on the tray until firm; this makes dipping them in chocolate easier.
- Melt Almond Bark: Melt the white almond bark in the microwave in 30-second intervals, stirring until smooth and fully melted.
- Start Chocolate Puddles: Spoon small puddles of melted almond bark onto a parchment paper-lined surface; these will serve as bases to anchor the truffles once dipped.
- Dip Truffles: Dip each truffle ball into the melted white chocolate using two forks to lift and shake off excess coating, then place it onto a chocolate puddle on the parchment paper.
- Repeat Dipping: Continue dipping all truffles, allowing excess chocolate to drip off, and place each onto their respective puddle to set.
- Decorate: Once the almond bark coating has fully set, begin decorating your snowmen.
- Add Scarves: Wrap a twisted Twizzler peel around each truffle like a scarf.
