  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Garnish

  • Fresh parsley, chopped

Instructions

  1. Heat the oil: Heat the olive oil in a large skillet over medium-high heat.
  2. Cook the sausage: Add the sausage to the skillet, breaking it up into small pieces with a wooden spoon. Cook until browned and fully cooked, about 5-7 minutes.
  3. Set aside sausage: Remove the cooked sausage from the skillet and set it aside on a plate.
  4. Sauté vegetables: In the same skillet, add the diced onion and red bell pepper. Sauté for about 3 minutes until the onion becomes translucent.
  5. Add garlic and zucchini: Stir in the minced garlic and sliced zucchini. Sprinkle with Italian seasoning, salt, and pepper. Cook for another 5-7 minutes, stirring occasionally, until the zucchini is tender.
  6. Combine sausage and veggies: Return the cooked sausage to the skillet and mix everything well. Cook for an additional 2 minutes to heat all ingredients through.
