Ingredients
Scale
Main Ingredients
- 3 ripe bananas (mashed)
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 cup milk
- Vegetable oil for frying
Toppings (Optional)
- Powdered sugar
- Honey
Instructions
- Prepare the Wet Ingredients: In a large mixing bowl, combine the mashed bananas, egg, vanilla extract, and milk until smooth to form the wet base of the batter.
- Mix Dry Ingredients: In a separate bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg ensuring the spices are evenly distributed.
- Combine Mixtures: Gradually add the dry ingredients to the banana mixture, stirring gently until just combined to avoid overmixing which can toughen the fritters.
- Heat Oil: Pour about 1/2 inch of vegetable oil into a skillet and heat over medium heat until hot but not smoking, ideal for frying.
- Fry Fritters: Drop spoonfuls of the batter into the hot oil, then flatten slightly with the back of the spoon to form fritters. Fry for 2 to 3 minutes per side or until golden brown and fully cooked through.
- Drain and Serve: Remove fritters from the oil and drain on paper towels to remove excess oil. Serve warm, optionally topped with powdered sugar or drizzled with honey for added sweetness.
Notes
- To enhance flavor, add a splash of rum or a handful of shredded coconut to the batter.
- These fritters are best enjoyed fresh but can be reheated in a toaster oven for a crisp finish.
