Instructions

  1. Prepare the Wet Ingredients: In a large mixing bowl, combine the mashed bananas, egg, vanilla extract, and milk until smooth to form the wet base of the batter.
  2. Mix Dry Ingredients: In a separate bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg ensuring the spices are evenly distributed.
  3. Combine Mixtures: Gradually add the dry ingredients to the banana mixture, stirring gently until just combined to avoid overmixing which can toughen the fritters.
  4. Heat Oil: Pour about 1/2 inch of vegetable oil into a skillet and heat over medium heat until hot but not smoking, ideal for frying.
