Grit Bases:
- 1 cup stone-ground grits
- 4 cups water
- 1 teaspoon salt
- 1/2 cup shredded sharp cheddar cheese
- 2 tablespoons unsalted butter
- 1/4 teaspoon black pepper
Shrimp Topping:
- 1/2 pound shrimp (peeled, deveined, tails removed)
- 1 tablespoon olive oil
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
- 1 clove garlic, minced
- Chopped fresh chives for garnish
Instructions
- Prepare Grit Bases: Boil water with salt, whisk in grits, simmer until thick. Stir in cheese, butter, and pepper. Spoon into muffin pan cups, chill.
- Cook Shrimp: Toss shrimp with oil, paprika, cayenne, and garlic. Sauté until cooked through.
- Assemble: Place a cooked shrimp on each grit base. Bake until heated through. Garnish with chives.

- You can make the grit bases ahead and refrigerate.
- Top with remoulade or aioli for added flavor.
