Ingredients
Scale
Crust
- 1 refrigerated pie crust (or homemade)
Filling
- 4 large eggs
- 4 slices cooked bacon, chopped
- 1/2 cup shredded cheddar cheese
- 2 tablespoons milk
- Salt and pepper to taste
- 1 tablespoon chopped chives (optional)
Additional
- 1 tablespoon butter, melted
- 1 egg, beaten (for egg wash)
Instructions
- Preheat and Prepare: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
- Cut the Crust: Unroll the refrigerated pie crust onto a clean surface and cut it into 8 equal rectangles using a knife or pizza cutter.
- Make the Egg Mixture: In a bowl, whisk together 4 large eggs, 2 tablespoons of milk, and salt and pepper to taste until well combined.
- Scramble the Eggs: Heat a skillet over medium heat and scramble the egg mixture until just set but still moist. Remove from heat immediately to avoid overcooking.
- Mix in Bacon and Cheese: Stir the chopped cooked bacon and shredded cheddar cheese into the scrambled eggs while still warm, allowing the cheese to melt slightly.
- Assemble the Pop Tarts: Arrange 4 crust rectangles on the prepared baking sheet. Spoon the egg, bacon, and cheese filling evenly onto each rectangle, leaving about a 1/2 inch border around the edges.
- Seal the Pop Tarts: Top each with a second crust rectangle. Press the edges together firmly with a fork to seal the filling inside and prevent leakage during baking.
- Apply Egg Wash: Brush the tops of the pop tarts with the beaten egg wash to achieve a golden, glossy finish once baked.
- Bake: Place the baking sheet in the preheated oven and bake for 20 to 25 minutes, or until the pop tarts are puffed and golden brown on top.
- Cool and Garnish: Allow the pop tarts to cool slightly on the baking sheet. If desired, sprinkle chopped chives on top before serving for a fresh, herby flavor.
Notes
- You can substitute sausage for bacon for a different savory flavor.
- Add sautéed veggies such as spinach or bell peppers to the filling to boost nutrition and taste.
- These pop tarts freeze well; reheat them in a toaster oven or microwave for a quick breakfast.
