Instructions
- Boil Potatoes and Green Beans: Bring a medium pot of salted water to a boil. Add the halved baby potatoes and cook for 8–10 minutes until just fork-tender. Add the green beans during the last 3 minutes of cooking. Drain and set aside.
- Brown the Sausage: In a large skillet, heat olive oil and butter over medium-high heat. Add the sliced smoked sausage and cook for 4–5 minutes until nicely browned. Remove the sausage from the skillet and set aside.
- Sauté Onions and Garlic: In the same skillet, add the sliced onion and cook for 2–3 minutes until softened. Stir in the minced garlic and smoked paprika, cooking until fragrant.
- Cook Vegetables Together: Add the cooked potatoes and green beans to the skillet. Season with salt and pepper, then sauté everything together for 5–6 minutes until the vegetables are golden and heated through.
- Finish with Sausage and Garnish: Return the browned sausage to the skillet, stir to combine all ingredients, and cook for another 1–2 minutes. Garnish with chopped fresh parsley and serve warm.
