Instructions

  1. Boil Potatoes and Green Beans: Bring a medium pot of salted water to a boil. Add the halved baby potatoes and cook for 8–10 minutes until just fork-tender. Add the green beans during the last 3 minutes of cooking. Drain and set aside.
  2. Brown the Sausage: In a large skillet, heat olive oil and butter over medium-high heat. Add the sliced smoked sausage and cook for 4–5 minutes until nicely browned. Remove the sausage from the skillet and set aside.
  3. Sauté Onions and Garlic: In the same skillet, add the sliced onion and cook for 2–3 minutes until softened. Stir in the minced garlic and smoked paprika, cooking until fragrant.
  4. Cook Vegetables Together: Add the cooked potatoes and green beans to the skillet. Season with salt and pepper, then sauté everything together for 5–6 minutes until the vegetables are golden and heated through.
  5. Finish with Sausage and Garnish: Return the browned sausage to the skillet, stir to combine all ingredients, and cook for another 1–2 minutes. Garnish with chopped fresh parsley and serve warm.
