- 2 tablespoons whole milk, plus more if needed

Instructions
- Preheat the Oven: Set your oven to 350˚F (175˚C) to ensure it’s hot and ready when your dough is prepared.
- Mix Dry Ingredients: In a food processor or large bowl, combine the sifted self-rising flour and butter. Add the granulated sugar, pumpkin pie spice, ground nutmeg, ground cloves, cinnamon, and a pinch of salt. Mix these ingredients until well incorporated.
- Add Wet Ingredients: Stir in the beaten egg and 2 tablespoons of whole milk to the dry mixture. Mix until a sticky dough forms, adding a little more milk if the dough feels too dry. Fold in the raisins gently to distribute them evenly.
- Form the Rock Cakes: Using a spoon or ice cream scoop, drop heaping spoonfuls of the dough onto a lined baking sheet. Space the cakes about 2 inches apart to allow for expansion during baking.
- Bake: Place the baking sheet in the preheated oven and bake for 15-18 minutes, or until the tops of the rock cakes are golden brown and firm to the touch.
- Cool and Serve: Remove the cakes from the oven and let them cool on the baking sheet for at least 5 minutes before transferring them to a wire rack. Enjoy them plain or spread with butter or jam.
Notes
- If your dough is too dry, add a teaspoon of milk at a time until the right consistency is achieved.
- Spices can be adjusted to your preference or substituted with mixed spice if preferred.
- For a nut-free version, ensure the pumpkin pie spice does not contain nuts and omit if needed.
