- Prepare the Potatoes: Cut the red potatoes into roughly 1-inch pieces, aiming for uniform size to ensure even cooking. You can leave the skins on for extra texture and nutrients or peel them if you prefer.
- Season the Potatoes: Place the cut potatoes into a large bowl. Drizzle with 2-3 tablespoons of olive oil and sprinkle 1 teaspoon of Italian seasoning along with salt and freshly ground black pepper. Toss everything together well to coat each piece evenly.
