- Prepare Peanut Butter Mixture: In a microwave-safe bowl, combine 1 cup peanut butter and 1/3 cup powdered sugar. Microwave the mixture until melted and smooth, stirring halfway through to ensure even melting.
- Crush Rice Chex: In a large bowl, crush the 4 cups of rice Chex into small pieces using your hands or a rolling pin, creating a coarse but manageable texture.
- Combine and Chill: Pour the melted peanut butter mixture over the crushed Chex and stir until all pieces are evenly coated. Cover the bowl and chill the coated mixture in the refrigerator for 30 minutes to firm up.
- Melt Chocolate: Melt 2 cups of semi-sweet chocolate chips using a double boiler or microwave in short bursts, stirring frequently until completely smooth and glossy.
- Form Truffles: Remove the chilled Chex mixture from the refrigerator. Using about 1½ tablespoons of the mixture each time, roll into tight balls until all mixture is used, making approximately 18 truffles.
- Dip in Chocolate: Dip each ball into the melted chocolate, ensuring it is fully coated. Use a fork to lift the truffle and let the excess chocolate drip off, then place each one on a parchment-lined baking sheet.
- Set and Coat: Chill the chocolate-coated truffles in the refrigerator until the chocolate hardens completely, about 15-20 minutes. Once set, roll each truffle in the remaining 1/2 cup powdered sugar to finish before serving.
