Ingredients
Scale
Vegetables and Fruits
- 1 1/2 cups fresh pineapple, diced
- 1/2 sweet red bell pepper, diced
- 1/2 onion, diced
- 1 Tbsp fresh ginger, grated
- 1 garlic clove, pressed
- 2 Tbsp green onions, chopped
Staples and Condiments
- 2 Tbsp soy sauce (or to taste)
- 2 Tbsp oil (for stir-frying)
- 1 tsp sesame oil (optional but highly recommended)
- 1 Tbsp sesame seeds (optional)
Carbohydrates
- 2 cups cooked white rice (cold; made from 1 cup uncooked white rice cooked with 1 Tbsp butter and 1/4 tsp salt)
Instructions
- Prepare Rice: Rinse 1 cup uncooked white rice thoroughly and cook according to package instructions or in a rice maker. Add 1 Tbsp butter and 1/4 tsp salt during cooking. Allow the rice to cool completely; using cold, leftover rice prevents stickiness during stir-frying.
- Chop Vegetables and Pineapple: Dice the fresh pineapple, red bell pepper, onion, grate ginger, press garlic, and chop green onions. Having all ingredients prepped beforehand is essential as cooking progresses quickly.
- Heat the Pan: Preheat a heavy-bottomed skillet or wok over medium heat. Add 2 Tbsp of oil and swirl to coat the surface evenly.
- Sauté Onion, Garlic, and Ginger: Add diced onion to the hot oil and cook for about 1 minute until softened. Add pressed garlic and grated ginger, stirring constantly, and sauté for another minute to release their aromas.
- Add Bell Pepper and Pineapple: Increase heat to medium-high and toss in diced bell pepper and pineapple. Stir-fry for 3-5 minutes, stirring frequently, until the mixture turns golden and ingredients are slightly caramelized.
- Incorporate Rice and Soy Sauce: Add the cooled cooked rice and 2 Tbsp soy sauce to the pan. Stir continuously for about 1 minute until the soy sauce is evenly blended and rice is heated through.
- Finish with Sesame Oil and Garnish: Turn off the heat and stir in 1 tsp sesame oil to enhance flavor. Plate the fried rice and sprinkle with chopped green onions and sesame seeds if desired. Serve warm immediately.
Notes
- Use cold, day-old rice for the best texture to avoid mushiness.
- You can substitute soy sauce with tamari for a gluten-free option.
- Add diced cooked chicken, shrimp, or tofu for extra protein.
- Adjust soy sauce quantity according to your salt preference.
- If sesame oil is not available, toasted olive oil may be used but will alter flavor.
