Description

This Pineapple BBQ Baked Chicken Breast recipe combines juicy chicken breasts with tangy barbecue sauce, sweet pineapple chunks, and crispy bacon bits for a flavorful and easy-to-make dish perfect for a weeknight dinner.

  • 4 chicken breasts

BBQ Sauce Mixture

  • 1 cup barbecue sauce (homemade or Sweet Baby Ray’s storebought)
  • 2 Tbsp brown sugar
  • 1 tsp hot sauce

  • 1 ½ cups pineapple, diced
  • 4 bacon strips, cooked and cut into bite-sized pieces


Instructions

  1. Cook Bacon: Cut bacon into bite-sized pieces and sauté them in a medium skillet over medium heat until crispy. Remove from skillet and set aside.
  2. Prepare BBQ Sauce: In a bowl, mix together the barbecue sauce, brown sugar, and hot sauce until combined. Spread a thin layer of this barbecue mixture onto the bottom of a baking dish.
  3. Prep Chicken: Lightly pound the chicken breasts to an even thickness to ensure even cooking. Season both sides with salt and pepper. Place the chicken breasts into the baking dish on top of the barbecue layer.
  4. Add Pineapple and Bacon: Cut the pineapple into bite-sized chunks if not already diced. Scatter the pineapple pieces and the cooked bacon evenly over and around the chicken in the baking dish.
  5. Bake: Pour the remaining barbecue sauce mixture evenly over the chicken, pineapple, and bacon. Bake the dish uncovered in a preheated oven at 375°F (190°C) for 25-30 minutes, or until the chicken is cooked through and juices run clear.
