Description

This Peppermint Pattie Pie is a delightful no-bake dessert combining a rich chocolate cookie crust with a creamy peppermint filling studded with chopped peppermint patties. Topped with whipped cream and chocolate shavings, it makes a perfect refreshing treat for holidays or any festive occasion.

Ingredients

Scale

Crust

  • 25 chocolate sandwich cookies, crushed
  • 6 tablespoons unsalted butter, melted

Filling

  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1/2 teaspoon peppermint extract
  • 2 cups heavy whipping cream, divided
  • 1/4 cup granulated sugar
  • 1 1/2 cups chopped peppermint patties (plus extra for garnish)

Topping

  • Chocolate shavings or drizzle for topping

Instructions

  1. Prepare the crust: In a medium bowl, combine crushed chocolate sandwich cookies with melted unsalted butter. Mix well and firmly press the mixture into the bottom and up the sides of a 9-inch pie dish. Place the crust in the refrigerator to chill and set for 20 minutes.
  2. Make the cream cheese mixture: In a large bowl, beat the softened cream cheese until smooth using an electric mixer. Gradually add powdered sugar and peppermint extract, mixing until creamy and well combined.
  3. Whip the cream: In a separate clean bowl, whip 1 1/2 cups of heavy whipping cream with granulated sugar until stiff peaks form.
  4. Combine filling: Gently fold the whipped cream into the cream cheese mixture until fully incorporated. Then stir in the chopped peppermint patties evenly through the filling.
  5. Assemble the pie: Spread the peppermint filling evenly into the chilled cookie crust.
  6. Prepare the topping: In a clean bowl, whip the remaining 1/2 cup heavy cream until soft peaks form. Spread this whipped cream layer over the top of the pie.
  7. Garnish and chill: Decorate the pie with extra chopped peppermint patties and chocolate shavings or drizzle as desired. Refrigerate the pie for at least 4 hours to set before serving. For best texture, slice and serve chilled.

Notes

  • For a stronger mint flavor, increase the peppermint extract slightly to taste.
  • This pie can be prepared a day in advance and stored covered in the refrigerator to enhance flavors.
  • For a frozen variation, place the pie in the freezer for 4 hours and allow to soften slightly before slicing to achieve a more firm texture.
