Crust
- 25 chocolate sandwich cookies, crushed

- 1/4 cup granulated sugar
- 1 1/2 cups chopped peppermint patties (plus extra for garnish)

Instructions
- Prepare the crust: In a medium bowl, combine crushed chocolate sandwich cookies with melted unsalted butter. Mix well and firmly press the mixture into the bottom and up the sides of a 9-inch pie dish. Place the crust in the refrigerator to chill and set for 20 minutes.
- Make the cream cheese mixture: In a large bowl, beat the softened cream cheese until smooth using an electric mixer. Gradually add powdered sugar and peppermint extract, mixing until creamy and well combined.
- Whip the cream: In a separate clean bowl, whip 1 1/2 cups of heavy whipping cream with granulated sugar until stiff peaks form.
- Combine filling: Gently fold the whipped cream into the cream cheese mixture until fully incorporated. Then stir in the chopped peppermint patties evenly through the filling.
- Assemble the pie: Spread the peppermint filling evenly into the chilled cookie crust.
- Prepare the topping: In a clean bowl, whip the remaining 1/2 cup heavy cream until soft peaks form. Spread this whipped cream layer over the top of the pie.
- Garnish and chill: Decorate the pie with extra chopped peppermint patties and chocolate shavings or drizzle as desired. Refrigerate the pie for at least 4 hours to set before serving. For best texture, slice and serve chilled.
