Description

  • 1 cup creamy peanut butter
  • 1/4 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 cups powdered sugar

Coating:

  • 2 cups semi-sweet chocolate chips
  • 2 tablespoons coconut oil or shortening


Instructions

  1. Prepare Filling: In a large mixing bowl, combine peanut butter, softened butter, vanilla extract, and salt. Beat until smooth. Gradually add powdered sugar until a thick dough forms.
  2. Shape Eggs: Scoop portions of the mixture and form into egg shapes. Place on parchment-lined sheet and freeze until firm.
  3. Coat in Chocolate: Melt chocolate chips and coconut oil. Dip each peanut butter egg, tap off excess chocolate, and refrigerate until set.
  4. Store: Keep the eggs in an airtight container in the fridge.
