Description

Peanut Butter Eggs are a delightful no-bake dessert that combines creamy peanut butter with a sweet chocolate coating, perfect for Easter or any festive occasion. These homemade treats feature a smooth peanut butter dough dipped in melted chocolate for a rich and satisfying candy experience.

Ingredients

Scale

Peanut Butter Filling

  • 1 cup creamy peanut butter
  • 1/4 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 cups powdered sugar

Chocolate Coating

  • 2 cups semisweet or milk chocolate chips
  • 1 tablespoon coconut oil or shortening (optional, for smoother coating)

Instructions

  1. Prepare the filling: In a large bowl, combine the creamy peanut butter, softened butter, vanilla extract, and salt. Mix thoroughly until the mixture becomes smooth and creamy, ensuring all ingredients are well incorporated.
  2. Add powdered sugar: Gradually add the powdered sugar to the peanut butter mixture, stirring as you go. Continue mixing until a thick dough forms that holds together well.
  3. Shape the eggs: Line a baking sheet with parchment paper. Scoop out portions of the peanut butter dough and shape each into egg-like ovals using your hands. Place the shaped eggs on the prepared baking sheet.
  4. Chill the peanut butter eggs: Refrigerate the shaped eggs for at least 30 minutes to allow them to firm up, making them easier to dip in chocolate.
  5. Melt the chocolate: While the eggs chill, melt the chocolate chips along with the coconut oil or shortening (if using) in a microwave-safe bowl. Heat in 30-second intervals, stirring between each, until the chocolate is smooth and fully melted.
  6. Coat the eggs: Dip each chilled peanut butter egg into the melted chocolate, ensuring it is fully coated. Use a fork or dipping tool to lift and allow excess chocolate to drip off.
  7. Set the chocolate coating: Place the coated eggs back onto the parchment-lined baking sheet. Allow the chocolate to set at room temperature or refrigerate them until the chocolate becomes firm.

Notes

  • Decorate the tops of the chocolate-coated eggs with sprinkles or a drizzle of white chocolate for a festive appearance.
  • Store the peanut butter eggs in an airtight container in the refrigerator for up to 2 weeks.
  • For longer storage, freeze the eggs and thaw before serving.
