  2. Prepare the peach mixture: In a medium bowl, toss the peeled and sliced peaches with 1/2 cup granulated sugar, 1/4 cup brown sugar, lemon juice, cinnamon, and vanilla extract. This will macerate the peaches and infuse them with warm spice flavors. Set aside to let the flavors meld.
  3. Mix the batter: In a large bowl, whisk together the flour, 1 cup granulated sugar, baking powder, and salt. Pour in the milk and stir until the batter is smooth and free of lumps.
  4. Assemble the cobbler: Pour the melted butter into a 9×13-inch baking dish. Pour the batter over the melted butter, but do not stir; this separation helps create a delicious crust. Spoon the peach mixture evenly over the batter, again without stirring, to keep the fruit on top as it bakes.
