- 1 pound smoked sausage, sliced into 1/4-inch rounds

- 2 cups chicken broth
- 1 can (14.5 oz) diced tomatoes, undrained

- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano

Instructions
- Heat Oil and Brown Sausage: Heat the olive oil in a large pot over medium heat. Add the smoked sausage slices and brown them for about 5 minutes until nicely caramelized. Remove the sausage from the pot and set aside.
- Sauté Vegetables: In the same pot, add the diced onion, red bell pepper, and green bell pepper. Sauté until the vegetables become tender, about 3-4 minutes.
- Add Garlic: Stir in the minced garlic and cook for an additional minute until fragrant.
- Add Rice and Combine: Add the rice to the pot and stir well to combine it with the sautéed vegetables and garlic.
- Add Liquids and Seasonings: Pour in the chicken broth and the undrained diced tomatoes. Add paprika, dried thyme, and dried oregano. Stir everything together thoroughly.
- Season: Season the mixture with salt and pepper according to your preference.
- Simmer Rice: Bring the mixture to a simmer, then reduce the heat to low, cover the pot with a lid, and let it cook for approximately 18 to 20 minutes until the rice is tender and the liquid is absorbed. Stir occasionally to prevent sticking.
- Return Sausage and Stir: Add the browned sausage slices back into the pot and stir everything together to combine evenly.
- Garnish and Serve: Garnish with sliced green onions and freshly chopped parsley before serving.
