Description

This One-Pot Ground Beef Stroganoff recipe is a comforting and hearty meal that combines tender ground beef, savory mushrooms, and egg noodles in a creamy sauce. Perfect for a quick family dinner, this dish is made entirely in one pot for easy cleanup and packed with rich flavors from Worcestershire sauce, Dijon mustard, and sour cream.

Ingredients

Scale

Meat and Vegetables

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 8 oz sliced mushrooms

Dry Ingredients

  • 2 tablespoons all-purpose flour
  • 2 cups egg noodles (uncooked)

Liquids and Sauces

  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • ½ cup sour cream

Additional Ingredients

  • Salt and black pepper to taste
  • 1 tablespoon olive oil (if needed)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Brown the beef: In a large skillet or pot over medium heat, cook the ground beef until browned, breaking it up as it cooks. Drain excess grease if needed.
  2. Sauté onions: Add the diced onion to the beef and cook for 2–3 minutes until softened.
  3. Cook garlic and mushrooms: Stir in the minced garlic and sliced mushrooms and cook for another 4–5 minutes until the mushrooms are tender.
  4. Coat with flour: Sprinkle the flour over the mixture and stir well to coat all ingredients evenly, which will help thicken the sauce.
  5. Add liquids and seasonings: Slowly pour in the beef broth while stirring continuously to avoid lumps. Add Worcestershire sauce and Dijon mustard, mixing to combine.
  6. Add noodles and simmer: Add the uncooked egg noodles, bring the mixture to a boil, then reduce heat to a simmer. Cover and cook for 10–12 minutes, stirring occasionally, until the noodles are tender and most of the liquid is absorbed.
  7. Finish with sour cream: Remove from heat and stir in the sour cream until the sauce is smooth and creamy.
  8. Season and garnish: Season with salt and black pepper to taste. Garnish with freshly chopped parsley before serving.

Notes

  • For a richer flavor, use full-fat sour cream.
  • If the sauce is too thick, add a splash of beef broth or milk to loosen it.
  • You can substitute Greek yogurt for sour cream for a tangier taste and lower fat option.
