Instructions
- Prepare the crust: In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter until evenly mixed. Press this mixture firmly into the bottom of a 9-inch springform pan to form a uniform crust. Place the pan in the refrigerator to chill while you prepare the filling.
- Dissolve the gelatin: In a small bowl, dissolve the orange gelatin mix by stirring it into 1/4 cup boiling water. Once dissolved, add 1/4 cup cold water and stir. Set the gelatin mixture aside to cool to room temperature, so it doesn’t affect the texture of the filling.
- Make the cheesecake filling: In a large mixing bowl, beat the softened cream cheese until it’s smooth and creamy. Gradually add the powdered sugar, vanilla extract, orange zest, and orange juice, mixing until fully combined and smooth.
- Combine gelatin and whipped topping: Stir the cooled gelatin mixture into the cream cheese mixture until evenly incorporated. Then gently fold in the thawed whipped topping, being careful to maintain a light and airy texture throughout the filling.
- Assemble and chill: Pour the prepared filling over the chilled crust, smoothing the top with a spatula. Cover the cheesecake and refrigerate for at least 6 hours or preferably overnight to allow it to fully set and develop its creamy texture.
