Instructions
- Prepare the mushrooms: Heat olive oil or butter in a skillet over medium heat. Add the thinly sliced onion and sauté until softened and translucent, about 3-5 minutes.
- Sauté mushrooms: Add the sliced mushrooms to the skillet with the onions. Cook, stirring occasionally, until the mushrooms release their moisture and become golden brown, approximately 7-8 minutes.
- Add flavorings: Stir in the minced garlic, soy sauce, Worcestershire sauce if using, and thyme. Continue to cook for another 2-3 minutes until the garlic is fragrant and flavors meld. Season with salt and freshly ground black pepper to taste.
- Toast the bread: While the mushrooms finish cooking, spread butter on one side of each bread slice. Heat a clean skillet or griddle over medium heat and toast the bread slices butter side down until golden and crispy.
- Assemble the sandwich melts: Place the toasted bread slices buttered side down on a baking sheet or skillet. Evenly distribute the sautéed mushroom mixture over each slice, then top with a slice of cheese.
- Melt the cheese: Cover the skillet with a lid or transfer the baking sheet to a preheated oven under broiler for 1-3 minutes until the cheese melts perfectly.
