Description

Mushroom Sandwich Melts are a savory and comforting dish perfect for a quick lunch or light dinner. Featuring sautéed mushrooms and onions infused with garlic, thyme, and soy sauce, these melts are crowned with melted cheese on toasted bread, delivering a hearty, flavorful meal in just 25 minutes.

Ingredients

Scale

Sautéed Mushrooms

  • 2 tablespoons olive oil (or butter)
  • 1 small onion, thinly sliced
  • 8 oz fresh mushrooms (cremini, white, or your choice), sliced
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon Worcestershire sauce (optional, for added umami)
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
  • Salt and freshly ground black pepper to taste

Sandwich Assembly

  • 4 slices of your choice of bread (sourdough, whole wheat, or sandwich bread)
  • 4 slices of cheese (Swiss, mozzarella, or cheddar are great options)
  • 1 tablespoon butter (for toasting the bread)
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. Prepare the mushrooms: Heat olive oil or butter in a skillet over medium heat. Add the thinly sliced onion and sauté until softened and translucent, about 3-5 minutes.
  2. Sauté mushrooms: Add the sliced mushrooms to the skillet with the onions. Cook, stirring occasionally, until the mushrooms release their moisture and become golden brown, approximately 7-8 minutes.
  3. Add flavorings: Stir in the minced garlic, soy sauce, Worcestershire sauce if using, and thyme. Continue to cook for another 2-3 minutes until the garlic is fragrant and flavors meld. Season with salt and freshly ground black pepper to taste.
  4. Toast the bread: While the mushrooms finish cooking, spread butter on one side of each bread slice. Heat a clean skillet or griddle over medium heat and toast the bread slices butter side down until golden and crispy.
  5. Assemble the sandwich melts: Place the toasted bread slices buttered side down on a baking sheet or skillet. Evenly distribute the sautéed mushroom mixture over each slice, then top with a slice of cheese.
  6. Melt the cheese: Cover the skillet with a lid or transfer the baking sheet to a preheated oven under broiler for 1-3 minutes until the cheese melts perfectly.
  7. Serve: Remove from heat, garnish with freshly chopped parsley if desired, and serve warm.

Notes

  • Use any mushrooms you prefer such as cremini, white button, or portobello for different flavors and textures.
  • If you prefer a vegan version, substitute cheese with vegan cheese and use olive oil instead of butter.
  • For extra flavor, add a pinch of smoked paprika or red chili flakes to the mushroom sauté.
  • To make it gluten-free, choose gluten-free bread.
  • Serve with a side salad or chips for a complete meal.
