Wet Ingredients
- 1 cup creamy peanut butter
- 1/2 cup unsalted butter (softened)
- 2 large eggs
- 1 teaspoon vanilla extract
Dry Ingredients
- 1 cup brown sugar (packed)
- 1/2 cup granulated sugar
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 2 cups old-fashioned oats
- 1 cup all-purpose flour
Add-ins
- 3/4 cup chocolate chips
- 3/4 cup M&M’s
- 1/2 cup mini chocolate chips (optional)
Instructions
- Preheat Oven and Prepare Baking Sheets: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper to prevent sticking and ensure even baking.
- Mix the Wet Ingredients: In a large bowl, beat together the creamy peanut butter, softened unsalted butter, brown sugar, and granulated sugar until the mixture is creamy and smooth.
- Add Eggs and Vanilla: Incorporate the eggs and vanilla extract into the mixture, mixing until everything is fully combined.
- Add Baking Soda and Salt: Stir in the baking soda and salt evenly throughout the batter to ensure proper rising and flavor balance.
- Combine Oats and Flour: Gradually add the old-fashioned oats and all-purpose flour to the wet mixture, mixing until fully incorporated into the dough.
- Fold in Chocolate and M&M’s: Gently fold in the chocolate chips, M&M’s, and mini chocolate chips if using, distributing them evenly throughout the dough.
- Portion the Dough: Scoop dough into 2-tablespoon portions and place them onto the prepared baking sheets, spacing each cookie about 2 inches apart to allow room for spreading.
- Bake the Cookies: Bake in the preheated oven for 10–12 minutes, or until the edges turn lightly golden and the centers look just set.
- Cool Before Serving: Remove the baking sheets from the oven and let the cookies cool on the sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- Customize your cookies by adding chopped nuts, butterscotch chips, or peanut butter chips for extra flavor and texture.
- To keep cookies soft, slightly underbake them and store in an airtight container after cooling.
