Description

Mississippi Chicken is a flavorful and tender slow cooker recipe featuring juicy chicken breasts simmered with pepperoncini peppers, ranch seasoning, au jus gravy mix, and rich butter. This easy-to-make dish requires minimal prep and results in a savory, melt-in-your-mouth meal perfect for busy weeknights or meal prepping.

Ingredients

Scale

Chicken

  • 4 large boneless skinless chicken breasts

Seasonings & Sauces

  • 12 pepperoncini peppers
  • 1/4 cup pepperoncini juice (from the jar)
  • 1 (1 ounce) packet ranch seasoning mix (Hidden Valley recommended)
  • 1 (1 ounce) packet au jus gravy mix

Butter

  • 1/2 cup (1 stick) unsalted butter, cut into pieces

Instructions

  1. Prepare the slow cooker and chicken: Place the four large boneless skinless chicken breasts into the slow cooker. This will be the base for your dish.
  2. Add peppers and seasoning: Pour in 1/4 cup of the pepperoncini juice over the chicken, then add the 12 pepperoncini peppers on and around the chicken. Sprinkle the chicken evenly with the ranch seasoning mix and the au jus gravy mix to infuse flavor.
  3. Add butter and cook: Place the pieces of unsalted butter on top of the seasoned chicken. Cover the slow cooker and cook on high for 3-4 hours or on low for 6-8 hours, until the chicken is tender and shreds easily.
  4. Shred and serve: Using two forks, shred the chicken directly in the slow cooker, mixing it well with the juices and peppers to coat all the meat in the flavorful sauce. Serve warm and enjoy your Mississippi Chicken!

Notes

  • For best flavor, use the juice from the pepperoncini jar along with whole peppers.
  • You can serve this chicken over mashed potatoes, rice, or on sandwich buns for a variety of meal options.
  • Leftovers store well in the refrigerator for up to 3 days and freeze well for up to 2 months.
  • Adjust the number of pepperoncini peppers for more or less heat and tanginess according to preference.
  • If you prefer, cook times can be adjusted for slow cooker settings; low and slow is best for tenderness.
