These crispy and flavorful Chicken Patties are made with ground chicken, panko breadcrumbs, Parmesan, and a blend of savory seasonings. Lightly fried to golden perfection, they make a perfect main dish served alongside rice and salad or with your favorite sauce.

For the Chicken Patties
- 1 pound ground chicken
- 1/2 cup panko breadcrumbs
- 1 egg
- 1 teaspoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 1 tablespoon lemon juice
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- Pepper, to taste
- 1/3 cup mayo
- 1/2 cup freshly grated Parmesan cheese
- 1 tablespoon Italian parsley, chopped
For Coating and Cooking
- 1/2 cup panko breadcrumbs (for coating)
- 2 tablespoons olive oil (for frying)
Instructions
- Mix Ingredients: Add half the panko breadcrumbs and all remaining ingredients except olive oil into a large bowl. Mix gently by hand until combined; expect the mixture to be wet and sticky.
- Prepare Plates: Set up two plates—one with the remaining panko breadcrumbs for coating, and one empty plate to place formed patties before cooking.
- Form Patties: Divide the mixture into 4 equal parts within the same bowl. Shape each into an oval patty, then roll them gently in the panko breadcrumbs until evenly coated. Place each coated patty on the second plate. Add more panko as needed to coat the last patties evenly. Keep patties similar in size and not too tall for even cooking.
- Heat Oil: Add olive oil to a skillet and heat over medium heat for 2 minutes until hot but not smoking.
- Cook Patties: In two batches, cook patties 5-6 minutes per side or until golden brown and internal temperature reaches 165°F. Add more oil for the second batch as needed. Adjust heat to prevent burning, especially for cast iron pans. Patties will continue cooking slightly after removal from heat.
- Serve: Serve patties immediately with your choice of sides such as rice, salad, and remoulade sauce for a complete meal.
Notes
- Use an instant-read thermometer to check that patties reach 165°F for safe eating.
- Do not make patties too thick to ensure they cook through evenly.
- Adjust seasoning with salt and pepper according to taste before forming patties.
- The remoulade sauce is optional but pairs wonderfully with these patties.
- For a lighter version, consider baking patties instead of frying, but frying gives the crispiest crust.
