- Drain Pineapple: Drain crushed pineapple thoroughly using a fine mesh strainer or by pressing gently to remove excess moisture, ensuring the mixture is not too wet.
- Mix Ingredients: In a medium bowl, combine the 2 cups of shredded coconut, drained pineapple, sweetened condensed milk, and vanilla extract (if using). Mix well until a sticky dough forms.
- Chill Mixture: Optionally, chill the mixture for 10–15 minutes to make it easier to handle and roll.
- Form Balls: Scoop approximately 1 tablespoon of the mixture and roll it into a ball shape using your hands.
- Coat with Coconut: Roll each formed ball in the extra ½ cup shredded coconut until fully coated.
