This Instant Pot Cajun Potato Soup is a hearty and flavorful soup combining tender potatoes, fresh vegetables, and bold Cajun spices. The soup is easy to customize with toppings like sour cream, cheese, and fresh herbs, making it a versatile dish for any gathering or simple weeknight dinner.

Ingredients

Scale

Key Ingredients

  • 4 medium potatoes, peeled and diced
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 cup frozen green beans
  • 1 cup frozen corn
  • 1 cup vegetable broth
  • 2 tbsp Cajun seasoning (adjust to taste)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1 tbsp oil (for sautéing)
  • Sour cream, shredded cheese, and fresh herbs (optional for garnish)

Instructions

  1. Cook the Vegetables: Add 1 cup of water to the Instant Pot insert and place a steamer basket inside. Add the diced potatoes, frozen green beans, and frozen corn to the basket. Secure the lid and set the valve to sealing.
  2. Pressure Cook Vegetables: Cook on high pressure for 5 minutes. Once done, carefully release pressure according to the Instant Pot instructions and remove the steamer basket.
  3. Sauté the Aromatics: Switch the Instant Pot to sauté mode and add a tablespoon of oil to the bottom of the pot. Sauté the chopped onion, diced carrots, diced celery, and minced garlic until softened and fragrant, about 5-7 minutes.
  4. Combine Ingredients: Stir in the vegetable broth, Cajun seasoning, garlic powder, onion powder, salt, and pepper. Add the cooked potatoes, green beans, and corn back into the pot, stirring well to combine all ingredients.
  5. Simmer: Secure the lid again and set the valve to sealing. Cook on high pressure for an additional 5 minutes. Allow for a natural pressure release for 10 minutes, then switch the valve to venting to release any remaining pressure.
  6. Serve Warm: Adjust seasoning if needed. Serve the soup hot, garnished with optional sour cream, shredded cheese, or fresh herbs as desired.
  7. Suggested Side Dishes: Serve with crusty bread for dipping and a fresh green salad to balance the hearty soup. A sprinkle of fresh parsley or cilantro adds a vibrant, fresh note.
