Ingredients
Scale
Chicken Bites
- 1 pound Chicken Breasts, cut into bite-sized pieces
- 1 tablespoon Cajun Seasoning
- 2 tablespoons Olive Oil
- Salt and Black Pepper, to taste
- 3 cloves Garlic, minced
- 1 tablespoon Butter
- 2 tablespoons Fresh Parsley, chopped
Pasta & Sauce
- 8 ounces Fusilli or Rotini Pasta
- 1 cup Sun-Dried Tomatoes, chopped
- 1 cup Heavy Cream
- ½ cup Parmesan Cheese, grated
- Salt and Black Pepper, to taste
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Add the fusilli or rotini pasta and cook according to package instructions until al dente. Drain and set aside.
- Prepare the Chicken: Season the bite-sized chicken breast pieces with Cajun seasoning, salt, and black pepper evenly. Heat olive oil in a large skillet over medium-high heat. Add the chicken pieces and cook until golden brown and cooked through, about 5-7 minutes, turning occasionally.
- Sauté Garlic and Combine Chicken: Push the chicken to one side of the pan and add butter to the cleared space. Add minced garlic and sauté until fragrant, about 1 minute. Stir garlic and chicken together.
- Make the Alfredo Sauce: Lower the heat to medium. Add heavy cream and sun-dried tomatoes to the skillet. Stir occasionally and allow the sauce to simmer gently until it thickens slightly, about 5 minutes.
- Incorporate Cheese and Season: Stir in the grated Parmesan cheese until melted and the sauce is creamy. Adjust the seasoning with salt and black pepper to taste.
- Combine Pasta and Sauce: Add the cooked pasta to the skillet and toss well to coat the pasta in the creamy Cajun Alfredo sauce with chicken bites.
- Garnish and Serve: Sprinkle fresh chopped parsley over the dish and serve immediately while hot and indulgently creamy.
Notes
- For a gluten-free option, use gluten-free pasta.
- Substitute chicken with firm tofu or turkey for different protein preferences.
- Use half-and-half or non-dairy cream to lighten the sauce or make it lactose-free.
- Fresh garlic is preferred for better flavor over garlic powder.
- Cajun seasoning can be adjusted based on spice tolerance; smoked paprika reduces heat.
- This dish is best served immediately to enjoy the creamy texture.
