Instructions
- Prepare Pastry: Preheat your oven to 375°F (190°C). Thaw the puff pastry according to package instructions until it’s flexible enough to roll out. Roll out the puff pastry on a cleansed surface to smooth the creases.
- Make Filling: In a medium bowl, combine softened cream cheese, sugar, and vanilla extract. Mix until smooth and creamy, making sure no lumps remain.
- Assemble Bites: Cut the rolled puff pastry into 12 equal squares. Place about a tablespoon of the cream cheese mixture onto the center of each square, then top each with a handful of raspberries. Carefully fold the corners of each square over the filling and gently press the edges to seal, forming little bites.
- Apply Egg Wash: Beat the egg with 1 tablespoon of water to create an egg wash. Brush the tops of the pastry bites to give a golden sheen after baking.
