Description

Indulgent Raspberry Cream Cheese Pastry Bites are delightful, flaky puff pastry bites filled with a creamy sweetened cream cheese mixture and fresh raspberries, topped with a light dusting of powdered sugar. Perfect as a sweet breakfast treat or a decadent dessert, these bites combine delicate textures and rich flavors in every bite.

Ingredients

Scale

Pastry

  • 1 package Puff Pastry (Consider using homemade pastry for richer taste.)
  • 1 large Egg (For egg wash)
  • 1 tablespoon Water (For egg wash)

Filling

  • 8 ounces Cream Cheese (Make sure it’s softened for easy mixing.)
  • 1/4 cup Sugar
  • 1 teaspoon Vanilla Extract (Substitute with almond extract for alternate flavor.)
  • 1 cup Raspberries (Fresh is best, but frozen raspberries can work if thawed.)

Topping

  • Powdered Sugar to taste (For a sweet, decorative dusting.)

Instructions

  1. Prepare Pastry: Preheat your oven to 375°F (190°C). Thaw the puff pastry according to package instructions until it’s flexible enough to roll out. Roll out the puff pastry on a cleansed surface to smooth the creases.
  2. Make Filling: In a medium bowl, combine softened cream cheese, sugar, and vanilla extract. Mix until smooth and creamy, making sure no lumps remain.
  3. Assemble Bites: Cut the rolled puff pastry into 12 equal squares. Place about a tablespoon of the cream cheese mixture onto the center of each square, then top each with a handful of raspberries. Carefully fold the corners of each square over the filling and gently press the edges to seal, forming little bites.
  4. Apply Egg Wash: Beat the egg with 1 tablespoon of water to create an egg wash. Brush the tops of the pastry bites to give a golden sheen after baking.
  5. Bake: Arrange the pastry bites on a baking sheet lined with parchment paper, spaced evenly. Bake in the preheated oven for approximately 18 minutes or until the pastries are puffed up and golden brown.
  6. Cool and Dust: Remove from the oven and let the bites cool slightly on a wire rack. Dust the top with powdered sugar to add a finishing touch.

Notes

  • Using fresh raspberries is recommended for best texture and flavor, but thawed frozen raspberries work as a substitute.
  • The puff pastry should be well-thawed and kept cold before baking to ensure maximum flakiness.
  • If you prefer a different flavor, substitute vanilla extract with almond extract for a nutty twist.
  • Brush with egg wash carefully to avoid dripping over the edges and causing burning on the baking sheet.
  • Serve warm or at room temperature for best taste and texture.
