Ingredients
Scale
Proteins
- 2 boneless skinless chicken breasts
Pasta & Dairy
- 1 cup orzo pasta
- 1 cup heavy cream
- 0.5 cup Parmesan cheese, grated
Vegetables & Aromatics
- 1 tablespoon garlic, minced
- 2 cups broccoli florets
Liquids & Oils
- 2 tablespoons olive oil
- 4 cups chicken broth
- 1 tablespoon lemon juice
Seasonings
- Salt, to taste
- Black pepper, to taste
Instructions
- Prepare the chicken: Heat olive oil in a large skillet over medium-high heat. Season the chicken breasts generously with salt and black pepper. Sear the chicken for about 4-5 minutes on each side until golden brown but not fully cooked. Remove chicken from the skillet and set aside.
- Sauté garlic: In the same skillet, add the minced garlic and sauté for 1 minute until fragrant, making sure it doesn’t burn.
- Add liquids and pasta: Pour in the chicken broth and bring it to a simmer. Stir in the orzo pasta and cook uncovered for about 7 minutes, stirring occasionally, until the pasta is nearly al dente.
- Add broccoli and chicken: Nestle the seared chicken breasts and broccoli florets into the simmering orzo mixture. Cover the skillet with a lid and cook for another 6-7 minutes, or until the chicken is cooked through (internal temperature of 165°F) and broccoli is tender.
- Create the creamy sauce: Remove the chicken breasts, shred or slice them, and return to the skillet. Stir in the heavy cream, Parmesan cheese, and lemon juice. Mix well and cook for an additional 2-3 minutes until the sauce thickens and everything is heated through.
- Season and serve: Taste and adjust seasoning with additional salt and black pepper if needed. Serve immediately, garnished with extra Parmesan if desired.
Notes
- You can substitute chicken breasts with thighs for a juicier result.
- For a lighter dish, substitute heavy cream with half-and-half.
- Use chicken broth with low sodium to better control salt levels.
- Ensure the orzo does not overcook to maintain a creamy texture without becoming mushy.
- If broccoli florets are large, chop them into smaller bite-sized pieces for even cooking.
