Scale
Dry Ingredients
- 1/4 cup all-purpose flour
- 2 tablespoons unsweetened cocoa powder
- 1/4 teaspoon baking powder
- 1/8 teaspoon baking soda
- 1/4 cup granulated sugar
- 1 tablespoon hot cocoa mix (for extra flavor)
Wet Ingredients
- 1/4 teaspoon vanilla extract
- 3 tablespoons milk
- 2 tablespoons vegetable oil
Mix-ins and Toppings
- 1/4 cup mini marshmallows
- 1 tablespoon hot cocoa mix (optional, for extra flavor after cooking)
- 2-3 tablespoons mini marshmallows (additional for topping)
- Whipped cream or extra hot cocoa mix (optional for garnish)
Instructions
- Combine dry ingredients: In a microwave-safe mug, whisk together the flour, cocoa powder, baking powder, baking soda, and sugar until well mixed.
- Add wet ingredients and cocoa mix: Stir in the vanilla extract, milk, vegetable oil, and 1 tablespoon of hot cocoa mix. Mix thoroughly until a smooth batter forms.
- Fold in marshmallows: Gently fold the mini marshmallows into the batter, distributing them evenly throughout.
- Microwave the batter: Place the mug in the microwave and cook on high for 1 minute and 30 seconds up to 2 minutes, depending on your microwave’s power, until the cupcake rises and is set in the center.
- Add extra cocoa and marshmallows: Spoon 1 tablespoon of hot cocoa mix and 2-3 tablespoons of mini marshmallows into the center of the cooked cupcake. Microwave again for 10-15 seconds to melt the marshmallows and cocoa mix.
- Garnish and serve: Carefully remove the mug from the microwave. Top the cupcake with whipped cream or a sprinkle of hot cocoa mix, if desired, and serve immediately for the best warm and chocolatey experience.
Notes
- Microwave power varies; adjust cooking time to avoid under or overcooking.
- Use a large microwave-safe mug to prevent overflow during cooking.
- For a richer flavor, use whole milk instead of lower-fat milk.
- Optional toppings like whipped cream or extra cocoa add to the indulgence but can be omitted for a lighter treat.
- Enjoy immediately, as the cupcake is best warm and fresh.
