Ingredients
Scale
Roasted Peaches
- 4 ripe peaches, peeled, pitted, and sliced
- 2 tablespoons honey (plus more for drizzling)
- 1 tablespoon lemon juice
Frozen Yogurt Mixture
- 1 ½ cups plain Greek yogurt (full-fat preferred)
- ½ teaspoon vanilla extract
- Pinch of salt
Optional Garnishes
- Sliced fresh peaches
- Crushed nuts
- Shaved coconut
- Extra honey
Instructions
- Preheat and Roast Peaches: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Arrange the peeled, pitted, and sliced peaches on the baking sheet, then drizzle them evenly with 2 tablespoons of honey. Roast the peaches for 20 to 25 minutes until they become soft and caramelized. Remove from the oven and allow the peaches to cool completely.
- Blend Ingredients: In a blender or food processor, combine the cooled roasted peaches, 1 ½ cups of plain Greek yogurt, 1 tablespoon of lemon juice, ½ teaspoon of vanilla extract, and a pinch of salt. Blend all the ingredients until the mixture becomes smooth and creamy.
- Freeze the Mixture: Pour the blended mixture into a freezer-safe container, smooth the top with a spatula, cover it tightly, and place it in the freezer. Freeze for 3 to 4 hours until the frozen yogurt firms up.
- Serve and Garnish: About 5 to 10 minutes before serving, remove the frozen yogurt from the freezer to soften slightly for easy scooping. Garnish with sliced fresh peaches, crushed nuts, shaved coconut, and an extra drizzle of honey if desired. Enjoy your creamy, fruity summer treat!
Notes
- Use ripe peaches for the best natural sweetness and flavor.
- Full-fat Greek yogurt contributes to a creamier texture, but a lighter version can be used if preferred.
- Allowing the roasted peaches to cool fully before blending ensures a smoother texture.
- For a more intense peach flavor, you can macerate the peaches in honey before roasting.
- Adjust the amount of lemon juice depending on your tartness preference.
- Frozen yogurt can be stored in the freezer for up to one week, but it’s best enjoyed fresh.
