Ingredients
Scale
Shrimp and Marinade
- 1 pound large shrimp (peeled and deveined)
- 2 tablespoons olive oil
- 2 tablespoons honey
- 2 tablespoons fresh lime juice
- 1 teaspoon lime zest
- 2 cloves garlic (minced)
- ½ teaspoon chili powder
- ½ teaspoon salt
Rice
- 2 cups cooked jasmine rice (cooled)
- 1 tablespoon rice vinegar
- Pinch of salt
Avocado Topping
- 1 large avocado (diced)
- ½ cup diced cucumber
- ¼ cup chopped fresh cilantro
- 1 tablespoon chopped green onions
Garnish and Serving
- 1 teaspoon sesame seeds (optional)
- Lime wedges for serving
Instructions
- Marinate the Shrimp: In a medium bowl, whisk together olive oil, honey, lime juice, lime zest, minced garlic, chili powder, and salt. Add the peeled and deveined shrimp, tossing to coat evenly. Let the shrimp marinate for 15 to 20 minutes to absorb the flavors.
- Prepare the Rice: In a separate bowl, toss the cooled jasmine rice with rice vinegar and a pinch of salt to add a subtle tang and enhance its flavor.
- Make the Avocado Mixture: Gently combine the diced avocado, diced cucumber, chopped cilantro, and chopped green onions in a small bowl, taking care not to mash the avocado.
- Cook the Shrimp: Heat a skillet over medium-high heat. Add the marinated shrimp and cook for 2 to 3 minutes per side until the shrimp turn pink and opaque, indicating they are fully cooked.
- Assemble the Rice Stack: Using a food ring mold or round measuring cup, press about ½ cup of the rice mixture into the base of the mold. Add a generous spoonful of the avocado mixture on top, then layer 3 to 4 cooked shrimp. Carefully lift the mold to reveal a neat stack.
- Garnish and Serve: Repeat with the remaining ingredients to make additional stacks. Sprinkle each stack with sesame seeds if desired, and serve immediately with lime wedges for an extra burst of citrus flavor.
Notes
- For added flavor, drizzle the assembled stacks with sriracha mayo or a light soy-lime dressing.
