For the Herb-Roasted Chicken:
- 4 bone-in, skin-on chicken thighs
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon garlic powder
For the Creamy Garlic Herb Sauce:
- 2 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 cup chicken broth
- 3/4 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1 tablespoon chopped fresh parsley
- 1 tablespoon chopped fresh basil (optional)
Instructions
- Preheat the oven: Preheat the oven to 400°F.
- Prepare the chicken: Pat dry the chicken thighs, rub with olive oil, and season with salt, pepper, thyme, rosemary, and garlic powder. Place on a baking sheet skin-side up.
- Roast the chicken: Roast for 35–40 minutes until golden and crispy.
- Make the sauce: In a skillet, melt butter, sauté garlic, add broth, then cream and Parmesan. Simmer until thickened. Stir in herbs.
- Serve: Transfer chicken to the skillet with the sauce or pour the sauce over the chicken. Spoon sauce over each piece and serve warm.
