- 2 pounds bone-in, skin-on chicken thighs
- 1 cup shoyu (soy sauce)
- 1 cup water
- 1/2 cup brown sugar
- 1/4 cup mirin (or rice vinegar)
- 5 cloves garlic (smashed)
- 1-inch piece fresh ginger (sliced)
- 2 green onions (chopped, for garnish)
- sesame seeds (optional, for garnish)
Instructions
- In a large pot or Dutch oven, combine the shoyu, water, brown sugar, mirin, garlic, and ginger. Stir to dissolve the sugar.
- Add the chicken thighs to the pot and bring to a boil over medium-high heat. Once boiling, reduce heat to a simmer, cover, and cook for 25 to 30 minutes, flipping the chicken halfway through.
- Remove the lid and continue simmering uncovered for another 10 to 15 minutes, or until the sauce thickens slightly and the chicken is fully cooked and tender.
- Serve hot over rice, garnished with green onions and sesame seeds if desired.
Notes
- You can use boneless, skinless chicken if preferred—just reduce the cooking time slightly.
- For extra flavor, marinate the chicken in the sauce for a few hours before cooking.
