- 4 envelopes Knox Gelatin
- 2 cups Water (Boiling)
- 1/2 cup Water (Cold)
Syrup and Flavorings
- 1 cup Water
- 1 cup Sugar
- 2 Tbsp Molasses
- 1 tsp Ground Ginger
- 1 tsp Ground Cinnamon
- 1/4 cup Gingerbread Simple Syrup
Alcohol Mix
- 1/2 cup Baileys Irish Cream
- 1/4 cup Butterscotch Schnapps
- 1/2 cup Vodka
Instructions
- Prepare the gingerbread syrup: In a small saucepan, combine 1 cup water, 1 cup sugar, molasses, ground ginger, and ground cinnamon. Bring the mixture to a simmer over medium heat, stirring frequently to dissolve the sugar and meld the spices. Once the sugar is fully dissolved and the syrup is aromatic, remove from heat and let it cool.
- Bloom the gelatin: In a large mixing bowl, sprinkle the 4 envelopes of Knox gelatin evenly over 1/2 cup cold water. Allow it to soak for about 5 minutes to bloom and absorb the water.
- Dissolve the gelatin: After blooming, pour 2 cups boiling water over the gelatin mixture and stir until completely dissolved.
- Combine flavored syrup and alcohol: To the dissolved gelatin, add the cooled gingerbread syrup along with Baileys Irish Cream, butterscotch schnapps, vodka, and the 1/4 cup gingerbread simple syrup. Stir gently to combine all ingredients thoroughly.
- Pour and chill: Pour the mixture evenly into 2 oz shot cups or molds. Refrigerate for at least 4 hours or until fully set and firm.
- Serve: Once set, serve the gingerbread jello shots chilled. Optionally, garnish with a sprinkle of ground cinnamon or a small gingerbread cookie for presentation.
