Sweet Potato Wedges:
- 2 large sweet potatoes, cut into wedges

- 1/3 cup grated Parmesan cheese

Instructions
- Preheat the oven: Preheat the oven to 425°F (220°C) and prepare a baking sheet.
- Toss sweet potatoes: In a bowl, toss sweet potato wedges with olive oil, garlic, salt, pepper, paprika, and thyme.
- Roast: Spread the wedges on the baking sheet and roast for 25–30 minutes, flipping halfway through.
- Add Parmesan: Remove from the oven, sprinkle with Parmesan, toss gently, and let it melt slightly.
- Garnish and serve: Garnish with parsley, if desired, and serve hot.
Notes
- For extra crispiness, soak the sweet potato wedges in cold water for 30 minutes before roasting, then dry thoroughly.
