Ingredients
Scale
Eggs
- 2 large eggs
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Tortillas & Cheese
- 2 flour tortillas
- 1/2 cup shredded cheese
Other
- 1 tablespoon butter
- 1/4 cup salsa
Instructions
- Heat the Skillet: Heat a nonstick skillet over medium heat to prepare for cooking the eggs and toasting the tortillas.
- Melt Butter: Add the butter to the skillet and allow it to melt, swirling the pan to coat the bottom evenly, which prevents sticking and adds flavor.
- Cook Eggs: Crack the eggs into the skillet carefully to keep yolks intact, and season with salt and black pepper.
- Sauté Eggs: Cook the eggs for 2-3 minutes until the whites are set but yolks remain runny, then carefully slide the eggs onto a plate and set aside.
- Toast First Tortilla: Place one tortilla into the skillet and heat it for 1-2 minutes until it is warmed and beginning to turn slightly golden.
- Add Cheese: Sprinkle half of the shredded cheese (1/4 cup) evenly over the tortilla to start melting it.
- Top with Second Tortilla: Place the second tortilla on top of the cheese-covered one and press down gently with a spatula to help the cheese melt.
- Cook Bottom Side: Cook for 1-2 minutes until the bottom tortilla becomes lightly browned and crispy.
- Flip Quesadilla: Carefully flip the quesadilla using a spatula and cook the other side for another 1-2 minutes until golden brown and cheese is fully melted.
- Slice Quesadilla: Remove the quesadilla from the skillet and place it on a cutting board. Use a sharp knife to slice it into wedges for easy serving.
- Assemble & Serve: Place the fried eggs on top of one of the wedges, spoon the salsa over the eggs, and serve immediately for a delicious meal.
Notes
- Use a nonstick skillet to ensure eggs and quesadilla don’t stick during cooking.
- If you prefer firm yolks, cook the eggs longer before removing.
- Feel free to add veggies like diced peppers or onions for extra flavor.
- Use your favorite type of shredded cheese, such as cheddar or Monterey Jack.
- Warm salsa before serving if desired for extra depth of flavor.
