Description

This Fried Egg Quesadilla is a quick and satisfying breakfast or snack combining crispy flour tortillas, melted cheese, and perfectly fried eggs topped with fresh salsa. Easy to make in a skillet, it delivers a comforting blend of flavors and textures that can be enjoyed anytime.

  • 2 large eggs
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Tortillas & Cheese

  • 2 flour tortillas
  • 1/2 cup shredded cheese

  • 1 tablespoon butter
  • 1/4 cup salsa


Instructions

  1. Heat the Skillet: Heat a nonstick skillet over medium heat to prepare for cooking the eggs and toasting the tortillas.
  2. Melt Butter: Add the butter to the skillet and allow it to melt, swirling the pan to coat the bottom evenly, which prevents sticking and adds flavor.
  3. Cook Eggs: Crack the eggs into the skillet carefully to keep yolks intact, and season with salt and black pepper.
  4. Sauté Eggs: Cook the eggs for 2-3 minutes until the whites are set but yolks remain runny, then carefully slide the eggs onto a plate and set aside.
  5. Toast First Tortilla: Place one tortilla into the skillet and heat it for 1-2 minutes until it is warmed and beginning to turn slightly golden.
  6. Add Cheese: Sprinkle half of the shredded cheese (1/4 cup) evenly over the tortilla to start melting it.
  7. Top with Second Tortilla: Place the second tortilla on top of the cheese-covered one and press down gently with a spatula to help the cheese melt.
  8. Cook Bottom Side: Cook for 1-2 minutes until the bottom tortilla becomes lightly browned and crispy.
  9. Flip Quesadilla: Carefully flip the quesadilla using a spatula and cook the other side for another 1-2 minutes until golden brown and cheese is fully melted.
  10. Slice Quesadilla: Remove the quesadilla from the skillet and place it on a cutting board. Use a sharp knife to slice it into wedges for easy serving.
  11. Assemble & Serve: Place the fried eggs on top of one of the wedges, spoon the salsa over the eggs, and serve immediately for a delicious meal.
