Instructions
- Blanch the French Beans: Bring a medium pot of salted water to a boil. Add the French beans and blanch for 2–3 minutes until bright green and just tender. Drain and transfer to an ice bath to stop the cooking. Drain again and pat dry.
- Sauté Shallots and Caramelize Peaches: In a large skillet, heat olive oil and butter over medium heat. Add the shallots and cook for 2–3 minutes until softened. Add the peach slices and drizzle with honey. Cook for 3–4 minutes, gently turning peaches until caramelized but still holding their shape.
- Combine and Glaze: Add the blanched green beans to the skillet and toss gently to combine. Drizzle in the balsamic vinegar and cook for 1–2 more minutes until everything is warmed through and coated in the glaze. Season with salt and pepper to taste.
- Serve and Garnish: Transfer to a serving platter and top with crumbled goat cheese or feta if using. Garnish with fresh thyme or basil. Serve warm or at room temperature.
