- 8 large flour tortillas
- 10 large eggs
- 1/4 cup milk
- 1 tablespoon olive oil
- 1 cup breakfast sausage (crumbled and cooked) or bacon bits
- 1 cup frozen diced hash browns (cooked)
- 1/2 cup diced bell peppers
- 1/2 cup diced onions
- 1 cup shredded cheddar cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper

Instructions
- Sauté Vegetables: In a large skillet over medium heat, heat olive oil and sauté the diced bell peppers and onions until soft, about 5 minutes.
- Warm Meats and Hash Browns: Stir in the cooked sausage and hash browns to warm through, mixing evenly with the vegetables.
- Prepare Egg Mixture: In a large bowl, whisk together the eggs, milk, salt, and black pepper until fully combined.
- Cook Scrambled Eggs: Pour the egg mixture into the skillet and cook over medium heat, stirring frequently, until the eggs are scrambled and fully cooked. Remove from heat and allow the filling to cool slightly.
- Assemble Burritos: Lay out the tortillas on a flat surface. Divide the egg mixture evenly among the tortillas and sprinkle shredded cheddar cheese on top of each portion.
- Roll Burritos: Fold in the sides of each tortilla and roll tightly into a burrito shape to enclose the filling.
- Wrap for Freezing: Wrap each burrito tightly in foil or parchment paper, then place all wrapped burritos in a freezer-safe bag or container. Freeze for up to 3 months.

- To reheat, unwrap the frozen burrito and microwave on high for 2–3 minutes or until heated through.
- Alternatively, bake frozen burritos in a preheated 350°F (175°C) oven for 20–25 minutes.
