Main Soup:
- 2 tablespoons olive oil
- 1 tablespoon unsalted butter
- 1 small onion (finely chopped)
- 2 carrots (peeled and diced)
- 2 celery stalks (diced)
- 2 garlic cloves (minced)
- 2 tablespoons tomato paste
- 1/4 teaspoon saffron threads
- 1/2 cup dry white wine
- 4 cups seafood or lobster stock
- 1 bay leaf
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup heavy cream
Additional Ingredients:
- 1 tablespoon brandy (optional)
- 1 1/2 cups cooked lobster meat (chopped)
- 1 tablespoon fresh chopped parsley
Instructions
- Sauté Aromatics: In a large pot, heat olive oil and butter, then sauté onion, carrots, and celery until soft. Add garlic and tomato paste, cook for 2 minutes.
- Add Flavor: Stir in saffron and white wine, simmer to reduce. Pour in stock, add bay leaf, paprika, salt, and pepper. Simmer for 25 minutes.
- Blend and Finish: Remove bay leaf, blend soup until smooth. Stir in cream and brandy, simmer for 5 minutes. Add lobster meat, cook for additional 2–3 minutes.
- Serve: Adjust seasoning, garnish with parsley, and enjoy hot!
Notes
- For a richer bisque, add a tablespoon of butter just before serving.
- You can substitute shrimp or crab for the lobster.
- If saffron is unavailable, you can omit or use a pinch of turmeric for color.
