Main Soup:

  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 1 small onion (finely chopped)
  • 2 carrots (peeled and diced)
  • 2 celery stalks (diced)
  • 2 garlic cloves (minced)
  • 2 tablespoons tomato paste
  • 1/4 teaspoon saffron threads
  • 1/2 cup dry white wine
  • 4 cups seafood or lobster stock
  • 1 bay leaf
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup heavy cream

Additional Ingredients:

  • 1 tablespoon brandy (optional)
  • 1 1/2 cups cooked lobster meat (chopped)
  • 1 tablespoon fresh chopped parsley

Instructions

  1. Sauté Aromatics: In a large pot, heat olive oil and butter, then sauté onion, carrots, and celery until soft. Add garlic and tomato paste, cook for 2 minutes.
  2. Add Flavor: Stir in saffron and white wine, simmer to reduce. Pour in stock, add bay leaf, paprika, salt, and pepper. Simmer for 25 minutes.
  3. Blend and Finish: Remove bay leaf, blend soup until smooth. Stir in cream and brandy, simmer for 5 minutes. Add lobster meat, cook for additional 2–3 minutes.
  4. Serve: Adjust seasoning, garnish with parsley, and enjoy hot!

Notes

  • For a richer bisque, add a tablespoon of butter just before serving.
  • You can substitute shrimp or crab for the lobster.
  • If saffron is unavailable, you can omit or use a pinch of turmeric for color.
