Ingredients
Scale
Cauliflower
- 1 head cauliflower (cut into florets)
Seasoning & Oil
- 3-4 tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1 teaspoon smoked paprika
Optional Garnish
- Fresh lemon juice (to taste)
- Freshly grated parmesan cheese (to taste)
Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C) and position the oven rack to the upper third to ensure even roasting and browning of the cauliflower.
- Prepare Cauliflower: Cut the cauliflower into bite-sized florets and pat them dry thoroughly with a paper towel to remove excess moisture, which helps achieve crispiness.
- Toss with Oil and Seasonings: Spread the cauliflower florets on a foil-lined baking sheet for easy cleanup. Drizzle the olive oil over the florets and toss them by hand to coat evenly. Sprinkle salt, pepper, garlic powder, Italian seasoning, and smoked paprika over the florets, then toss again until they are well coated. Be sure not to overcrowd the pan, as this will prevent proper browning.
- Roast Cauliflower: Place the baking sheet in the oven and roast uncovered for 25-28 minutes. Halfway through the cooking time, remove the pan and toss or flip the cauliflower to promote even browning and prevent burning on one side. Roast until the cauliflower is tender and golden with some caramelized edges.
- Finish and Serve: After roasting, optionally squeeze fresh lemon juice over the cauliflower and sprinkle freshly grated parmesan cheese for added brightness and richness. Serve immediately while hot and flavorful.
Notes
- Ensure the cauliflower florets are dry before tossing with oil to get crispy, non-soggy results.
- Do not overcrowd the baking sheet as this will cause steaming instead of roasting.
- You can adjust the seasoning according to your taste preferences or add chili flakes for a spicy kick.
- For a dairy-free option, omit parmesan cheese and just add lemon juice or fresh herbs like parsley.
- Roasted cauliflower can be stored in an airtight container in the fridge for up to 3 days and reheated in the oven to keep crispness.
