Description

These Easy No-Bake Cookies are a quick and delicious treat that combine rich cocoa, creamy peanut butter, and hearty oats. Perfect for when you want a sweet snack without turning on the oven, these cookies set up at room temperature and deliver classic comfort in every bite.

Ingredients

Scale

Wet Ingredients

  • 1/2 cup unsalted butter
  • 1/2 cup milk
  • 1/2 teaspoon vanilla extract
  • 1/2 cup peanut butter

Dry Ingredients

  • 1 1/2 cups granulated sugar
  • 1/4 cup cocoa powder
  • 3 cups quick oats
  • Pinch of salt

Instructions

  1. Prep: Line a baking sheet with parchment or wax paper to prepare for shaping the cookies later.
  2. Cook the Mixture: In a medium saucepan over medium heat, melt the unsalted butter. Once melted, stir in the granulated sugar, milk, cocoa powder, and a pinch of salt. Bring the mixture to a rolling boil, stirring often to prevent burning. Cook for 1-2 minutes to ensure the sugar dissolves and the mixture thickens slightly.
  3. Combine Ingredients: Remove the saucepan from heat. Quickly stir in the peanut butter and vanilla extract until the mixture is smooth and fully combined. Then, add the quick oats and mix well to evenly distribute.
  4. Shape the Cookies: Using a spoon or a cookie scoop, drop spoonfuls of the mixture onto the prepared baking sheet, spacing them adequately as they won’t spread much.
  5. Set: Let the cookies cool at room temperature for about 30 minutes or until they firm up and are set to touch. No refrigeration needed!

Notes

  • Use quick oats for best texture; old-fashioned oats work but the cookies might be chewier.
  • For a chocolate variation, add a handful of mini chocolate chips when mixing the oats.
  • Store cookies in an airtight container at room temperature for up to 5 days.
  • Make sure to stir continuously during boiling to prevent burning the sugar and butter mixture.
