Ingredients
Scale
Meat and Seasonings
- 3 lb chuck roast (trimmed)
- 2 tbsp steak seasoning
- 1 tbsp dried thyme
- Oil for searing (about 1-2 tbsp)
Liquid
- 1 cup beef broth
- â…“ cup water
Optional Vegetables
- 2 lbs potatoes, cut into large pieces
- 1 lb carrots, cut into large pieces
- 1 yellow onion, cut into large pieces
- Oil for tossing vegetables (about 1-2 tbsp)
Instructions
- Seasoning the Roast: Generously coat the chuck roast on both sides with oil, steak seasoning, and dried thyme to build a flavorful crust.
- Searing the Roast: Heat a skillet over high heat and sear the roast for 2-3 minutes on each side until browned. This step adds depth and locks in juices.
- Deglazing the Skillet: Pour beef broth into the hot skillet, scraping the pan to release browned bits, then transfer the broth along with the roast into the slow cooker.
- Preparing and Adding Vegetables: If using, cut potatoes, carrots, and onion into large chunks, toss them with oil and seasonings, then layer on top of the roast in the slow cooker.
- Slow Cooking: Cover and cook on low for 7-8 hours or on high for 3.5-4 hours, until the meat is fork-tender and vegetables are soft.
- Thickening the Gravy: Dissolve cornstarch in water to create a slurry, then stir it into the slow cooker juices before serving to thicken the gravy.
Notes
- Searing the roast is optional but highly recommended for richer flavor.
- You can customize vegetables depending on preference—parsnips or celery root work well too.
- If you prefer a thicker gravy, adjust the amount of cornstarch slurry accordingly.
- Leftovers can be stored in an airtight container in the refrigerator for up to 4 days.
- For a lower sodium option, use low-sodium beef broth and reduce added salt in seasoning.
