  • 2 lbs potatoes, cut into large pieces
  • 1 lb carrots, cut into large pieces
  • 1 yellow onion, cut into large pieces
  • Oil for tossing vegetables (about 1-2 tbsp)


Instructions

  1. Seasoning the Roast: Generously coat the chuck roast on both sides with oil, steak seasoning, and dried thyme to build a flavorful crust.
  2. Searing the Roast: Heat a skillet over high heat and sear the roast for 2-3 minutes on each side until browned. This step adds depth and locks in juices.
  3. Deglazing the Skillet: Pour beef broth into the hot skillet, scraping the pan to release browned bits, then transfer the broth along with the roast into the slow cooker.
  4. Preparing and Adding Vegetables: If using, cut potatoes, carrots, and onion into large chunks, toss them with oil and seasonings, then layer on top of the roast in the slow cooker.
  5. Slow Cooking: Cover and cook on low for 7-8 hours or on high for 3.5-4 hours, until the meat is fork-tender and vegetables are soft.
  6. Thickening the Gravy: Dissolve cornstarch in water to create a slurry, then stir it into the slow cooker juices before serving to thicken the gravy.
